Exceptional classic kitchen knife made with traditional hand-forging techniques. This second-hand knife is vintage from the 80’s, with French writing on the blade. Nevertheless, it has been rigorously renovated and is as good as new – or even better.

Second-hand rare gyuto from Tadafune. The knife has French writing, that says: “trademark / Tadafune / special steel / handmade”.

The gyuto shape is modern all-round knife shape that is inspired by the French chef’s knife shape. This discontinued knife series is produced with the European market in mind.

The blade is polished, then sharpened using a series of Japanese whetstones with a 4000 grit finish. The handle is polished and oiled.

This beautiful one-of-a-kind kitchen knife is made from Japanese carbon steel, and has a decent hardness of around 60 HRC. It features a forged-welded bolster that goes into the tang.

Note: the steel alloy used in this knife is not stainless, so it will patina and potentially rust over time if not kept clean. After use, it’s recommended to wash and dry to avoid rust.
