Upcycled Sukehisa Minamoto Gyuto 180 mm.
Sukehisa is a classic Japanese maker. Masayasu Yoshimito, apprenticed in 1952 at age 15 under his father, and started producing this line of knives in the 60’s. This upcycled knife is likely from the 80’s.
Made from Japanese carbon steel, this old line of knives has a thin grind with a nice hardness of around 60 HRC.
This second-hand knife is renovated completely. Old handle is removed and replaced with a custom one made from teak with brass pins. The knife has also been thinned and then sharpened using a series of Japanese whetstones.
Note: It is used and has some scratches along the blade.
