This second-hand knife is meticulously upcycled. It has as a new custom handle made out of padauk wood. The octagonal shape flows down to its bolster, making it very comfortable to hold. The blade is lightly polished and resharpened by hand using Japanese whetstones.
The Masahiro MSC knives is often called “household series” in Japan, and that is a perfect description of this knife. Its familiar blade and stainless steel makes it a perfect companion for any home cook. Masahiro produces a wide range of knives, and has become popular among professional chefs that want a reliable knife without breaking the bank.
The MSC series is discontinued and there’s only a few old-stock knives to be found today.
