It’s no secret that the nakiri knife is a perfect knife to use when cutting vegetables and fruit. This second-hand nakiri is no different. It has a superthin grind and a new custom handle made out of beech and ebony wood. The bevels of the knife is polished using a series of whetstones and has been gently etched in strong coffee to force patina, since the carbon core steel is reactive to oxidation.
The kanji on this knife reads: “registrered trademark, handmade, quality made”.
Note: 1) The bevels still has some lowspot, but I chose to not further thin this because it is already incredible thin, 2) This is a carbon steel, not stainless, so it may patina further and potentially rust if not kept dry, 3) Due to its thin grind, it is not recommended to cut frozen foods or meat with bone, as it may chip the edge.
